Whipped up this delicious White Bean and Miso Soup with some leeks and spinach. It's quite easy to make and can be adapted to suit your own flavors or ingredients on hand. This should cost you under $7 for the whole pot!

11. In a large pot, on medium high heat, add olive oil and onions. Fry for 1- 2 minutes to brown onions, then add garlic, and leeks, and fry for another 2 minutes. Next add the white beans, water, spices and lemon juice, and mix everything together. Set heat to low to simmer for 20 minutes.

22. Turn off the heat, and add miso paste. Mix it in so that it dissolves. Then add spinach and mix around till spinach wilts.

33. Serve and garnish with cracked pepper to taste, and parsley or chives.

Ingredients

3 tbsp of Olive Oil

1 Medium onion (1 cup chopped)

3 cloves of garlic (minced)

3 cups of leek (1 sliced)

1/2 tbsp of salt

1 tbsp of cracked black pepper

1 Can of Cannellini Beans

4 cups of water

1 tsp of oregano

1 tsp of thyme

Juice of half lemon

2 tbsp of Miso Paste

3 cups of spinach

Green onions or parsley for garnish (optional)
