Here's how to make an easy but delicious sweet potato hash, a vegetarian breakfast recipe, that will cost you less than $3 a serving. I use the term sweet potatoes and yams interchangeably here.

11. In a large pan on medium-high heat, add 3 tbsp of Olive Oil. When hot, add onions and sweet potatoes/yams. Mixed to evenly coat in oil, then add spices. Cook for 10 minutes or till the potatoes can be bitten through and have browned on the outside. Keep stirring every minute or so, being careful they don't burn. add more oil if necessary.

22. Add the mushrooms and chopped greens, and saute till cooked through. Then add 4 eggs and let the whites seap into the bottom. Then mix everything together. The heat of the food and pan will quickly cook the egg, preventing the hash from getting soggy. Remove from heat.

33. Garnish (optional) with avocado, green onion, and pepper.

Ingredients

3 tbsp of Olive Oil

2 Medium Sweet Potatoes/Yams (6 Cups Chopped into 1/2 to 1 inch size)

1 Cup of Onions (Chopped)

1 tbsp of Salt

1 tbsp of Cumin

1 tbsp of Paprika

1 Cup of Mushrooms or other chopped vegetables

3 Cups of Chopped Greens (Swiss Chard, Kale or Spinach)

4 Eggs

1 Avocado (Optional)

Green onion for Garnish (Optional)

Ground Pepper/chili flakes to taste (Optional)
