Today we're making Miso Scrambled Eggs. This is the easiest recipe on the channel, but it really is quite delicious with the savory umami flavors. And you can make this in less than 10 minutes!

11. In a mixing bowl, add eggs and miso paste, and whisk till Miso chunks are no longer chunks.

22. Place a nonstick pan on medium low, add oil and chopped onions. Fry till onions become translucent and start to brown.

33. Add whisked eggs to the pan and continue to scrape the bottom of the pan with a non metal spatula. If egg cooks immediately on contact, lift pan off of the burner. The heat of the pan will be enough to cook the eggs. Keep moving the eggs from the bottom, and add the pan back to the stove if the eggs are still very runny. Once eggs are cooked through, (don't overcook!) plate, and garnish with cracked pepper, and green onion. You can also serve this on toast, with fried mushrooms, or some smashed avocado, with some fresh seasoned tomato, or orange slices on the side. Enjoy!

1/2 cup of onion (chopped)

2 Eggs

1 tbsp of oil

1 tbsp of Miso Paste

Fresh Cracked Pepper to Taste

Green Onion for Garnish (Optional)
