This Red Lentil Dhal coconut curry is a great high protein, and high calorie plantbased vegan & vegetarian recipe, that is also cheap and delicious. It's especially healthy & nutritious served with some Quinoa. I even like to eat it with a big salad, or fry in some veggies like kale and tomatoes.

11. In a large non stick pan on medium high heat. Add vegetables oil. Then fry onions, garlic, ginger and spices till onions are soft. About 10 minutes. Add a dash or two of water if they start to stick to the pan.

22. Add a can of coconut milk and one can of water. 2 cups. Then cook for up to 40 minutes. Add another cup of water if water reduces to quickly and it starts to stick to the pan.

33. Serve with quinoa or rice, and garnish with cilantro or green onion.

Ingredients

2 tbsp of Vegetable Oil

1 Medium onions (Chopped)

1 tbsp of Ginger

3 Cloves of Garlic

1 tsp of Cumin

1 tsp of Chili powder

1 tsp of Paprika

1 tsp of Tumeric

1 can of coconut milk (about 400 ml)

1 tbsp of Salt
