This Quinoa and Beansprout Stir fry in a Thai Peanut sauce is a deliciously saucy, yet healthy recipe.

Directions

1Put a large hot wok or pan on high heat. Once hot add oil, wait till oil is hot, then fry onions for a minute. Add Chili Paste, Garlic, and Ginger, and toss till well mixed and coated. Add Bell peppers. Fry for a minute, moving food around in the wok.

2Add soy sauce, peanut butter, and honey to the wok, and mix around.

3Add Quinoa, and Bean sprouts and fry for a minute. If the dish needs more salt, use fish sauce to taste.

4Garnish with Lime Juice, Peanuts and Green Onions.

Ingredients

2 Tbsp of Vegetable Oil

1 Large Chopped Onion

1 Tbsp of Chili Paste (Thai Red or Green)

1 Tbsp of Garlic (Minced)

1 Tbsp of Ginger

2 Cups of Bell Peppers (Sliced)

2 Tbsp of Soy Sauce (Light or Sweet)

2 Tbsp of Peanut Butter

1 Tbsp of Honey

2 Cups of Cooked Quinoa

3 Cups of Bean Sprouts

Fish Sauce to Taste

Juice of 1/2 Lime

Green Onions and Peanuts to garnish
