Kimchi Fried Quinoa | (Kimchi Fried “Rice”)

This Kimchi Fried Quinoa is a healthier and in my opinion tastier version of Kimchi Fried Rice, otherwise known as Bokkeumbap. It's another great quinoa stir fry recipe.

11. Heat a large Wok or pan on Medium High Heat. Once hot, add oil, and onions. You should hear a sizzle. Fry onions for a few minutes till they start to become translucent. Then add Kimchi, ginger, and Bok Choy, and fry for another 2-3 minutes.

22. Move veggies to the side and drop in Quinoa. Fry for 1-2 minutes, then add Gochujang, kimchi juice, and sesame oil. Mix and remove from heat.

33. If desired fry an egg per serving and garnish with green onion. Can season with soy sauce if saltier flavour is desired.

Ingredients

3 Cups of Cooked Quinoa

1 Cup of Kimchi (Chopped)

2 tbsp of Kimchi Juice

2 tbsp of Vegetable Oil

1 Medium Onion (Chopped)

3 Bok Choy Bulbs (Quartered)

1-2 tbsp of Sesame Oil

1 tbsp Ginger (Optional)

1-2 tbsp of Gochujang (Optional, but adds a ton of flavour)

4 Fried Eggs (Optional)
