A healthier version of Butter Chicken. One of my favorite dishes to make. Simple to prepare and make, easy to cleanup, tasty and affordable. I always have these ingredients in stock.

Ingredients

1 Large Onion

2 Tablespoons Olive Oil

500 Grams Chicken Thighs - boneless skinless, chopped

3 Cloves of Garlic - Minced

2 Tablespoons of Butter

3 Tomatoes - Chopped

2 Medium Sized Bell Peppers - Chopped

4 Table Spoons of Tomato Paste

1 Table Spoon of Salt - To Taste

1 Teaspoon of Cumin

1 1/2 Table Spoon Paprika

400 ml Coconut Milk

2 Cups of Spinach

Other Additions you can include

30 Grams of Ginger

Cilantro Garnish

1 Teaspoon Garam Masala

Chill Peppers to Taste

1 Table Spoon Sugar to help caramelize onions
