Enjoy this simple buddha bowl spiced with Tex Mex flavors and using my Vegan Ground Beef. You can avoid this if you prefer or use beans or another meat substitute.

11. In a large pan of medium high heat, add Olive oil. Next add Onions and fry for a few minutes. Then add bell peppers, and garlic, and fry for a couple minutes. Add Spices. If they start sticking to the pan you can add a little water.

22. Once peppers are almost cooked through, add frozen corn, and fry till corn is no longer Frozen. Then add vegan ground beef. Mix and make sure it doesn't burn. Remove from heat.

33. In a bowl, add spinach at the bottom and top off with ground beef recipe. Garnish with avocado, and option cherry tomatoes, cilantro, and garlic.

Ingredients

2 tbsp of Olive Oil

2 Cups of Onions (Sliced)

2 Cups of Bell Peppers (Sliced)

2 Cloves of Garlic

2 Cups of Vegan Ground Beef

2 Cups of Frozen Corn

2 Cups of Spinach

2 Cups of

1/2 tbsp of Salt

1 tbsp of Chilli Powder

1 tbsp of Cumin

1 tbsp of Paprika.. or Cayenne..

1 Avocado (Chopped)

Optional Garnish: Cherry Tomatoes, Cilantro, Green Onions

Water or stock to loosen pan goodies
