White Bean and Miso Soup Recipe for Under $1.25 Per Serving

Whipped up this delicious White Bean and Miso Soup with some leeks and spinach. It’s quite easy to make and can be adapted to suit your own flavors or ingredients on hand. This should cost you under $7 for the whole pot!

Recipe:
– 3 tbsp of Olive Oil
– 1 Medium onion (1 cup chopped)
– 3 cloves of garlic (minced)
– 3 cups of leek (1 sliced)
– 1/2 tbsp of salt
– 1 tbsp of cracked black pepper
– 1 Can of Cannellini Beans
– 4 cups of water
– 1 tsp of oregano
– 1 tsp of thyme
– Juice of half lemon
– 2 tbsp of Miso Paste
– 3 cups of spinach
– Green onions or parsley for garnish (optional)

Here’s how to make Asian chicken and vegetable lettuce wraps. I’ve taken a few recipes here and mashed them into my own creation. One of them being the popular PF Changs Lettuce Wraps.

4 Chicken Thighs (Chopped Finely) or sub Ground Chicken/Turkey
1 Cup Carrots
1/2 Cup Celery (Chopped)

1 Small Can of Water Chestnuts (Chopped)

1 tablespoons of Rice Wine Vinegar
2 Tablespoons Low Sodium Soy Sauce

Worlds Best Chili

Here’s how to make the World Best Chili with ground beef and tons of vegetables. This was the best bowl of Chili I’ve ever had, and it tasted even better as leftovers. My girlfriend groaned at having chili for dinner until she tried a bite.
Recipe: 8 Servings ($1.30 per Serving)
Ingredients:
2 Tablespoons of Olive Oil
1 lb or 1/2 Kilo of Ground beef
1 1/2 Cup of Onions (Chopped)
1 Cup of Carrots (Chopped)
1 Cup of Celery (Chopped)
1 Cup of Bell Peppers (Chopped)
1/2 cup Mushrooms (Chopped)
4 Cloves of Garlic (Minced)
1 Tablespoons of Chilies (Minced)
3 Cups of Beans (Mixed + Kidney)
1 Cup of Corn (Frozen or Canned)
1 1/2 Tablespoons of Chipotle in Adobo Sauce (Chopped)
2 Tablespoons of Tomato Paste
1 1/2 Cups Chopped/Crushed Tomatoes
1/2 Cup of Beer
A few drops of Liquid Smoke
2 Teaspoons of Cumin
1 Tablespoon of Oregano
1 Tablespoon Paprika
1 Tablespoon Chili Powder
2 teaspoons of Brown Sugar

Homemade Chicken Nuggets – ~18 Nuggets

Here’s how to make homemade Chicken Nuggets. In preparation, I went to McDonalds to pick up some Chicken Nuggets to see what they taste like as I haven’t had them in 5 years or so. I was shocked that 6 nuggets came out to $5.35 Canadian. That’s like $8 American right now. I made 3 times as many nuggets for the less than what I paid at McDonald’s for 6, and the ones I made were healthier and tastier.
Recipe:
4 Chicken Thighs or 2 Breasts (Chopped into 1 1/2 Square Inches)
1-2 Eggs
1 Cup Panko Breading
1 Tablespoon of Basil and Thyme
Salt and Pepper to taste
1 Tablespoon of Parmesan (Optional)

Hey guys, I made a delicious tuna and sole Ceviche recipe, on this episode of Bachelor on a Budget. In my opinion, this how to make the best fish ceviche recipe I’ve tried. It’s so fresh and healthy, ton’s of nutrition, and it doesn’t need to cost all that much. I went to the grocer and asked for the cheapest most fresh fish.

Recipe:
– 400 grams of fresh fish (semi firm: tuna, sole, sea bass, flounder)
– Juice of 3 Limes
– 1/2 Cup of Red Onion (Chopped)
– 1/2 Cup of Bell Pepper (Sliced)
– 1/2 Cup of Tomato (Cored and Chopped)
– 1/4 cup of Cilantro
– 1/4 Cup Green Onions
– 1 Avocado (Chopped)
– 1 Chipotle Pepper
– Salt and Pepper to taste

Pimp Your Perogies

Hey guys, on this episode of Bachelor on a Budget, I show you how to ‘Pimp Your Perogies’ to create a quick, cheap, and tastefully nutritious meal. I whip up a Pierogi dish like this, when I cant figure out what to make, and I have some perogies in the freezer that I bought on sale. Recipe below.

1 Bunch of Kale (Washed, dryed, and chopped)
1 Pomegranate (Seeded)
1 Avocado
1/4 Cup of Sunflower and/or Pumpkin Seeds
5 Tablespoons of Olive Oil
1 Tablespoon of Balsamic Vinaigrette.

This is the ultimate quinoa salad recipe. It’s an easy recipe, super healthy and comes out be be pretty cheap. It’s the best Quinoa salad I’ve tried or made and I know you’ll love it!

1 3/4 Cups of Stock, Broth or Water
Salt to Taste
1/2 Cup of Red Onion (Finely Chopped)

Here’s how to make Cauliflower Wings otherwise known as Cauliflower Bites 3 ways including Honey Garlic, Buffalo or Hot, and a sweet Thai. This isn’t totally vegan because of the honey, fish sauce, and yoghurt, but it is Vegetarian. If you’re Vegan, omit these ingredients for similar replacements.

Batter
1 Head of Cauliflower (5 cups)
1/2 Cup of Flour
1/2 Cup of Cornstarch
1 tsp onion powder
1 tsp garlic powder
1 tsp of paprika
1 tsp salt

1 Cup of almond milk (or Cow’s milk/Soy)

Buffalo Hot Sauce
1 tbsp butter
⅓ Cup Frank’s Hot Sauce
1 tsp of Honey

1 Tablespoon Soy Sauce
2 Garlic Cloves (Minced)

Thai
1 tbsp of Sesame Oil

Mini-Eggplant Pizzas

Here’s how to Make Eggplant Pizzas. These mini aubergine pizzas skip the bread, making it quite low carb. This is probably my new favourite easy eggplant recipe, and I love eggplants when they’re cooked well.
I believe Julia Child came up with the original recipe and concept, but I’ve modified it to my taste and budget.

Ingredients
– 1 Large Eggplant (1/2 Inch thick slices)
– 2 tbsp of Olive Oil
– 1 Cup of Pizza Sauce or Spiced tomato sauce.
– 1-2 Cups of Desired Pizza toppings (thinly sliced)
– 1 tbsp of italian herbs
– 1 Cup of Mozzarella (Shredded)
– 1/4 Cup of Fresh Herbs for garnish (basil, green onions, or parsley)
– Salt to taste
