This roasted miso glazed eggplant recipe is one of my favorite ways to cook eggplant. Miso Glazed Eggplant comes out rich and savory with umami flavors and it’s also vegan and vegetarian!

– 1 Eggplant (1/2 inch slices)
– 2 tbsp of Miso Paste
– 2 tbsp of Rice Vinegar (I’ve even used apple cider, or sake combined with mirin. The idea is to add an acidic flavor)
– 1 tbsp of Sugar (Or sugar substitute: maple syrup, honey, mirin)
– 1 tsp of Soy Sauce
– Chopped Green Onions for garnish

Here’s how to make an easy but delicious sweet potato hash, a vegetarian breakfast recipe, that will cost you less than $3 a serving. I use the term sweet potatoes and yams interchangeably here.

– 3 tbsp of Olive Oil
– 2 Medium Sweet Potatoes/Yams (6 Cups Chopped into 1/2 to 1 inch size)
– 1 Cup of Onions (Chopped)
– 1 tbsp of Salt
– 1 tbsp of Cumin
– 1 tbsp of Paprika
– 1 Cup of Mushrooms or other chopped vegetables
– 3 Cups of Chopped Greens (Swiss Chard, Kale or Spinach)

Frozen Vegetable Pesto Pasta that’s super quick and easy

Cooking with frozen vegetables has been a new theme for the channel, and I’ve had a lot of people who don’t normally cook, tell me they’ve been making the dishes and love them. This is a very simple pesto pasta with a frozen vegetable stir fry medley, that saves you time, money, and tastes delicious.

400 Grams of Frozen Vegetable Stir Fry Medley
300 Grams of Dry Pasta Noodles
2 Cloves of Garlic (Minced)
5 tbsp of Olive Oil
1 tsp Salt and Pepper (To Taste)
3-4 tbsp of Pesto Sauce (I use the Costco brand)
1 Egg
Lemon for Garnish

Frozen Vegetable Thai Curry

Frozen Vegetable Thai Curry without chopping anything!

This frozen vegetable Thai Curry is going to amaze you because I didn’t need to chop a single ingredient and it was delicious. I used a frozen vegetable stir fry medley from Costco and it was perfect but you could also add some flavor enhancers like onion, garlic, or ginger and some other fresh vegetables like sweet potatoes, tomato, or eggplant. This is a vegan and vegetarian recipe if you don’t add the fish sauce, and use salt instead.

Frozen Vegetable Thai Curry
– 2 tbsp of coconut oil
– 2 tbsp of Thai Curry paste (Red or Green)
– 500 Grams of Frozen Vegetable Stir Fry Medley
– 1 can of coconut milk (400 ml)
– 1 tsp Fish sauce or salt to taste (Fish sauce is not vegan)

This Red Lentil Dhal coconut curry is a great high protein, and high calorie plantbased vegan & vegetarian recipe, that is also cheap and delicious. It’s especially healthy & nutritious served with some Quinoa. I even like to eat it with a big salad, or fry in some veggies like kale and tomatoes.

On this episode of Bachelor on a Budget, we make a Frozen vegetable Stir Fry. Frozen Vegetables can have more nutrition than much of the fresh produce you buy at the store, as it is flash frozen. Frozen vegetables require virtually no prep, and can be quite a bit cheaper if buying in bulk. In this recipe, we skip defrosting the frozen veggies first to avoid sogginess.

1 Teaspoon of Soy Sauce

On this episode of Bachelor on a Budget I show you how to cook ribs in the oven. This Oven Baked Ribs recipe is amazingly tasty and the best I’ve made. They’re slow cooked to perfection and taste as if they’ve been smoked or slow cooked on the BBQ.
You can see in the end that very little bone is sticking out which means little protein loss, and more flavourful ribs.

A healthier version of Butter Chicken. One of my favorite dishes to make. Simple to prepare and make, easy to cleanup, tasty and affordable. I always have these ingredients in stock.

Healthy Butter Chicken Recipe: ($2 – $4 per serving)
1 Large Onion
2 Tablespoons Olive Oil
500 Grams Chicken Thighs – boneless skinless, chopped
3 Cloves of Garlic – Minced
2 Tablespoons of Butter
3 Tomatoes – Chopped
2 Medium Sized Bell Peppers – Chopped
4 Table Spoons of Tomato Paste
1 Table Spoon of Salt – To Taste
